I thought that this still medium dry perry could have had something to do with Gloucester Cathedral, but the "Stinking Bishop" is actually the local name for the Moorcroft perry pear which also featured as as ingredient in a jelly in a recent cookery competition.
It also is used to make a cheese which gets its name from the perry used to wash it during its making.
Has a rather unusual bouquet, not like a slight mustiness that intrigues you to keep on sipping it.
One of the best perry's that i have tried this year.
Enjoy slightly chilled and with a good cheese and cold meat board.
